Walnut Bolognese

About the Recipe

Nutty, rich and delicious, here's your vegetarian alternative to an easy weeknight staple!

Ingredients

  • 200 grams walnuts

  • 100 mls red wine

  • 5 cloves garlic, peeled

  • 5 medium carrots, peeled and grated

  • 1 large courgette, grated

  • 2 leeks, firmly diced

  • 2 medium onions, grated

  • 2 jars (680 grams) tomato passata

  • 1 tbsp dried oregano

  • 1 tbsp herbs de provence

  • 1 bay leaf

  • 1/2 tsp tamari

  • 1/2 balsamic vinegar

  • Salt

  • Pepper

Preparation

Step 1


Preheat a large pot on a medium heat.



Step 2


In a blender, pulse the walnuts for a just a few seconds, watching closely. The walnuts should resemble mince. Add walnuts to the pot and brown for 4-5 minutes.



Step 3


Add the red wine to the walnuts and reduce down for 2 minutes. Add the garlic and stir for a further minute. Then add the vegetables, herbs, bay leaf and tomato passata. Stir.



Step 4


Lower the heat and let simmer for 20-30 minutes, stirring occasionally.


Step 5


To finish off, season with salt and pepper. Stir in vinegar and tamari until completely combined.


Step 6


Serve with spiralized courgette or pasta of choice.
