Ingredients
200 grams walnuts
100 mls red wine
5 cloves garlic, peeled
5 medium carrots, peeled and grated
1 large courgette, grated
2 leeks, firmly diced
2 medium onions, grated
2 jars (680 grams) tomato passata
1 tbsp dried oregano
1 tbsp herbs de provence
1 bay leaf
1/2 tsp tamari
1/2 balsamic vinegar

Preparation
Step 1
Preheat a large pot on medium heat.
Step 2
In a blender, pulse the walnuts for a just a few seconds, watching closely. The walnuts should resemble mince. Add walnuts to the pot and brown for 4-5 minutes.
Step 3
Add the red wine to the walnuts and reduce down for 2 minutes. Add the garlic and stir for a further minute. Then add the vegetables, herbs, bay leaf and tomato passata. Stir.
Step 4
Lower the heat and let simmer for 20-30 minutes, stirring occasionally.
Step 5
To finish off, season with salt and pepper. Stir in vinegar and tamari until completely combined.
Step 6
Serve with spiralized courgette or pasta of choice.
